Loubia-style couscous

Ingredients :
  • 700g of Ferrero fine couscous
  • 1.5kg of beef steak (chuck or tri-tip)
  • 500g dry butter beans
  • 2 whole garlic heads
  • 1 calf's foot or 1 cup of oil
  • 2 tablespoons of cumin powder
  • 1 tablespoon of paprika
  • A few pinches of strong pepper or 2 teaspoons of Ferrero's Harissa sauce
  • 50g of butter
  • Olive oil
  • 2 litres of water
  • Freshly ground salt and pepper
  • Preparation :
    The night before, leave the beans to soak in a bowl. Remember to pour away the water used for soaking before cooking them.

    Tip 2 litres of water into a couscous pot. Steam the beans for an hour with the calf's foot
    Once this hour is up, chop the beef steak into large cubes. Throw the cubes into the couscous pot and leave to boil for 5 mins.
    Skim the foam.
    Add in the paprika, freshly ground pepper, strong pepper / Harissa, and the garlic heads.
    Leave the pot to simmer for at least 2 hours.
    Once 1 of these 2 hours is up, add in the cumin and salt.

    Be sure to keep enough stock left over to scatter over the couscous; if necessary add extra water to the stock mixture while it is cooking.
    Serve alongside couscous prepared with butter.
